2021 Skigh 'Second Sun' Blanc de Blanc

Early harvested clone 1 Chardonnay from a combination of Wallcliffe and Wilyabrup regions was used to create this racy blanc de blanc.

Primary fermentation was encouraged using cultured Pris de Mousse Bayanus yeast in barrel. 8 months lees age in oak led to tirage and a further 10 month Båttonage prior to disgorge.

Fermented to complete dryness in an extra Brut style this wine celebrates both regionality and tradition.
