Unmistakably Margaret River Cabernet, but as with all of our reds, leaning towards the feminine. Lots of red fruit, a little eucalyptus and loads of cocoa. Long elevage in French oak has softened out the acid beautifully.
Hand plunged 3 times daily over the course of 2 weeks with an additional 3 week post fermentation maceration the skins were basket pressed for gentle tannin extraction after both primary and ML fermentations were completed.
Drinking very well now, but will reward ageing.
